Zucchini Fritters with Fresh Herbs

If your garden or local farm stand is overflowing with zucchini, this easy recipe is a perfect way to put them to use. These fritters are crispy on the outside, tender on the inside, and filled with the bright flavor of fresh herbs. They’re simple, satisfying, and pair well with just about anything—though we love them best with a dollop of sour cream or Greek yogurt on top.

🥒 Ingredients:

  • 2 cups grated zucchini (about 2 medium)
  • 1/4 cup chopped fresh herbs (parsley and chives work great)
  • 1/4 cup all-purpose flour
  • 1 egg
  • Salt and pepper, to taste
  • Oil for frying (olive or avocado oil recommended)

  1. Prep the zucchini
    Grate the zucchini into a bowl and sprinkle with a pinch of salt. Let sit for 5–10 minutes, then squeeze out as much liquid as you can using a clean kitchen towel or cheesecloth.
  2. Mix it up
    In a large bowl, combine the zucchini, chopped herbs, flour, egg, and a good pinch of salt and pepper. Mix well until a thick batter forms.
  3. Cook the fritters
    Heat a few tablespoons of oil in a skillet over medium heat. Drop spoonfuls of the batter into the pan and flatten them slightly with a spatula. Cook for about 3–4 minutes per side, or until golden and crisp.
  4. Serve hot
    Transfer the cooked fritters to a plate lined with paper towels. Serve warm with sour cream, yogurt, or a squeeze of lemon.
