Sweet Corn & Basil Fritters

Crispy, golden bites of sunshine straight from the farm stand.
When fresh corn is at its peak, there’s nothing quite like these savory fritters. Packed with sweet kernels and fragrant basil, they make a delicious side dish, light lunch, or even a fun appetizer for family gatherings. They come together in one bowl and are pan-fried to golden perfection.
🌽 Ingredients:
- 2 ears of fresh corn (or 1 ½ cups corn kernels)
- 1/4 cup chopped fresh basil
- 1/4 cup flour
- 1 egg
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
- Oil for frying

- Prep the corn
Cut the kernels off the cob into a bowl. If using frozen corn, make sure it’s thawed and patted dry. - Mix the batter
Add basil, flour, egg, Parmesan (if using), and a good pinch of salt and pepper. Stir until just combined—don’t overmix! - Fry the fritters
Heat a little oil in a skillet over medium heat. Drop spoonfuls of the mixture into the pan, flatten slightly, and cook for 2–3 minutes per side, or until golden and crisp. - Serve warm
These are best right out of the pan, served with sour cream, plain yogurt, or a little hot honey if you’re feeling adventurous.
🌿 Farm Stand Tip:
You can swap the basil for green onions, parsley, or even a pinch of chili flakes for extra kick. These also reheat beautifully in the oven or air fryer.
