Roasted Beets with Goat Cheese

If you’ve never roasted beets before, now’s the time. This simple side dish brings out the natural sweetness of fresh beets, which pair beautifully with tangy goat cheese. It’s elegant enough for company, yet easy enough for a weeknight. Pick up some beets from your local farm stand and let the oven do the work!

🍠 Ingredients:

  • 4 medium beets, scrubbed and quartered
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 cup crumbled goat cheese

👩‍🍳 Instructions:

  1. Preheat the oven
    Set your oven to 400°F (200°C).
  2. Prep the beets
    Trim and scrub the beets well. Cut into quarters or bite-sized chunks. Place them on a baking sheet and toss with olive oil, salt, and pepper.
  3. Roast
    Roast in the oven for 35–40 minutes, or until fork-tender and caramelized on the edges. Stir halfway through cooking for even browning.
  4. Finish with cheese
    Let the beets cool slightly, then transfer to a serving dish. Sprinkle with crumbled goat cheese just before serving.

🌿 Farm Stand Tip:

Golden or striped Chioggia beets work just as well and look beautiful on the plate. For extra flavor, drizzle with balsamic glaze or a spoonful of honey.
