Savory Herb Potato Galette

A beautifully layered potato dish that’s as impressive as it is inexpensive.
Potatoes are one of the most affordable and versatile ingredients around—and when you slice them thin and bake them with fresh herbs, garlic, and olive oil, they transform into something that looks and tastes restaurant-worthy. This galette is crispy on the edges, tender in the center, and perfect as a side or main with a simple salad.
🥔 Ingredients:
- 3–4 medium Yukon Gold or red potatoes, very thinly sliced
- 2 tablespoons olive oil or melted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme or rosemary (or 1 tsp dried)
- Salt and pepper, to taste
- Optional: 1/4 cup shredded parmesan or cheddar

- Prep the oven and pan
Preheat your oven to 400°F. Lightly grease a 9-inch cast iron skillet or round baking dish. - Season the slices
In a bowl, toss the sliced potatoes with olive oil (or butter), garlic, herbs, salt, and pepper until evenly coated. - Arrange in layers
Layer the potato slices in a circular pattern in the pan, overlapping slightly like shingles. Continue layering until the pan is full. - Bake until golden
Cover loosely with foil and bake for 30 minutes. Remove foil and bake for another 20–25 minutes, until the top is crisp and golden. Sprinkle with cheese in the last 10 minutes if desired. - Slice and serve
Let cool slightly before slicing into wedges. Serve warm or at room temperature.

This galette is a wonderful canvas—try adding thinly sliced onions, leftover greens, or even a fried egg on top for a more filling meal. It’s also great the next day, pan-fried for breakfast!
